Don’t wait on approval. Stay with your plan and keep your persistence to go the distance. Too many of us slow up to look back, or look to our sides to see who is following or supporting. Stop trying to convince everyone to believe in you and your ideas.

Be smart ad intelligent to always make the work done and push forward to make a difference in any circumstances either positive or negative. 

Believe In Yourself.

Your clear vision maybe blurry to someone else because it wasn’t meant for them. Just make sure you are always clear on your vision. Stay focused

​Turkey Sausage Empanadas

1 small onion, diced

2 cloves garlic, finely chopped

1 tablespoon butter

1/2 pound ground turkey

1 teaspoon ground sage

1 teaspoon salt

1/2 teaspoon pepper

1/2 teaspoon nutmeg

1/4 teaspoon paprika

1/2 teaspoon thyme

1/4 teaspoon rosemary

1/4 cup flour

2 – 2 1/2 cups whole milk

1 1/2 cups (4 ounces) grated Gruyere cheese

1/3 cup (1 ounce) grated parmesan cheese

1 18-count package empanada wrappers or you can make them using the pastry in this recipe

1 quart of oil for frying

In a large high-sided skillet, cook onion and garlic in 1 tablespoon of butter for about 3 minutes until soft. Add turkey and cook until fully browned, breaking it into pieces as it cooks. Remove as much of the turkey and onions from skillet as you can using a slotted spoon and place in a separate dish, leaving grease in pan. Stir in sage, salt, pepper, nutmeg, paprika, thyme, and rosemary.
Turn off heat and sift in flour while stirring until you have a thick and pasty mixture. Turn on heat to low and slowly pour in milk while whisking until completely smooth. Continue whisking until thickened. Add turkey back to pan and stir until heated then remove from heat and stir in the cheeses.
Spoon filling into the center of each wrapper. Wet the edges with water and and fold in half to form little half-moon shaped empanadas. 

Press edges together to seal and place them on a parchment lined tray.

Heat oil to 350 degrees F

in a dutch oven or deep fryer and fry the empanadas in batches until crisp and golden brown (4 – 6 minutes), flipping once. Transfer to paper towels to drain.

Serve hot!

Life can sometimes be sweet or bitter. At some points, you may find yourself at crossroads! You can decide to go forward or go back. You can even decide to stay right where you are. But remember, whatever your choice is, you will be defined by that choice. Sometimes it is not the things we do that make us fail, but it is the things we leave undone! Go ahead! Finish what you started. No matter what you can do it, have faith in yourself that anything is possible.

Forgive and Release 

Bottling  up your mistakes and past failures will have you to explode and crash into pieces. Not forgiving yourself will destroy you from the inside! It is like keeping acid in a plastic bottle. Don’t be too harsh on yourself. Love yourself because you deserve to be loved. You are not the only one to ever make a mistake. We all do. Listen, you can and will get through your stormy seasons in life. You will come out stronger and wiser to go for what is yours in the universe.

Tune in to your inner self. The answer is there. Every situation has a solution including yours. What people say about you is none of your business. That is their headache! You see, what people think about you cannot make or unmake you. The only reality about yourself is the reality you create for yourself. 

You are whatever it is that you think you are! Whether you are important or not, inferior or not, capable or not, worthy or not, it is yours to decide. How dare you allow someone to tell you what you can or can’t be, what you can or can’t do! Believe in yourself! Nothing can stop you but you.
Stop acting as if you have a thousand years to live. Live each day as if it were your last. Don’t waste it trying to live someone else’s life or someone else’s thoughts about you.

You are good the way you are. You have everything you need to live the life that you want. It’s in you!

Sometimes we have a tendacy to blame others when sometimes we need to look inward about certain things. You give your power away if you resort to blaming 24/7.

Allow your energy to focus on your unique talents and abilities. Don’t find an excuse to give up on your goal. Find a strong reason to keep going. Yes it’s tough and rough, even unfair at times! Don’t let what you have done so far be in vain, finish it and get your goal done.

Start thinking and working in a new direction, in a positive way and you will be amazed at what you can really do! You can do it. Stop the blame game and BELIEVE in yourself.
